We have similar taste. I am eyeing the same bike. I currently use my cbr250 for commuting, and would continue with the bmw f800gt. My ultimate goal is to add short distance travel and also 2-up, when possible. I'm excited about using the knowledge gained from my current to truly expand my horizons, while riding into them.

BMW does it again with a revamped moto that looks sexier than some girls!
I guess I will slap a bmw sticker on my 250 and stop daydreaming

Don't even have my first bike yet, but of course been looking to the future. :P

Yamaha FZ6. Sportbike performance with upright ergos. Or a nice 650 V-twin like a SV650F.

Almost anything is going to feel like a nitro-powered 18-wheeler by comparison. I switched back to my FZ1 this week and my first thought was "Oh my God, the weight!" My second was "Oh my God, the power!" And my third was "Oh my God, the weight!"

If you want to step up your dosage gradually, get a GS500 or Ninja 500. Then an SV650. Then the 600 repli-racer of your choice. Then a liter-bike.
If you want to skip steps, that's okay, but that's going to steepen your learning curve. The basic skill set is the same for any motorcycle, and the power delivery is literally in your hands. Just don't go WFO right off the bat!

I've recently been looking at the NC700S and Versys 650. I think I've outgrown the Sport / SuperSport type of bikes.

I too like the "Adventure" style bikes. The Honda X's, Versys, KLR's. They retain a certain sporty and aggressive look, yet retain comfortable ergonomics. Wish there was more variety and options in that style of bike.
