My dealer has a 2011 service manual for $70. I have a 2012 bike. He claims the 2011 manual is the same for the 2012 models. Is this true? Are there any differences from the 2011 to the 2012? Anything I need to keep in mind if I buy this book and use it on my 2012 model?

My 2012 manual (61KYJ01) was a 2011 with some included stickers reading 2012.
If you mail order it for $55 they will add about $15 for shipping, so $70 is about the price. And well worth it. You will save that much quickly doing your own service and maintenance.

As a matter of interest, what do the stickers change?

Nothing really... the stickers are placed on the cover and spine, covering the 2011 with 2011-2012. I'd guess that the next printing of the manual will say 2011-2013, but it will be the same service manual, with the same contents.

Still waiting for an email off Helm telling me it's available again. I suppose I could buy one off my dealer but I'll end up paying more for the official Honda one.

The manual published and sold by Helm, Inc. is the official Honda manual... Honda dealers, at least here in the U.S., have to order them through Helm as well.

Also worth noting is that pdf and printed versions of the service manual being sold online by anyone other than Helm, Inc. are illegal, pirated copies... buyer beware.
