Has anyone ever thought about getting different rims and putting a wider tire on the back? I'm not sure how hard that would be, or if it's even possible...but I think it would look great.

I think the rear is plenty wide for this bike. As for the practicality of a larger rear, you might be pushing the clearance limits of the swing arm if you go much wider. You'd also be playing with the handling of the bike - the very thing that many people say is it's best feature. It could be a very expensive way of finding out the handling is negatively affected by a larger rear. Or it could be the best thing you could do...

(sorry in advance for sounding like a douche but...) The people at Honda are A LOT smarter then us: If they feel that this is the best tire for this bike, I'll believe them. If it's a cosmetic thing, get a CBR600.

options range from slicks thru rain oriented
to off road designed tyres, depending on use..
some terrific slicks with great adhesion
dont last one full race,, whereas some road tyres
can last for many thousands of miles..
depends on what you intend doing on them
and how much you have to spend on tyres..

for general road use, mainly suburbia, nothing silly
usually, i found pirelli sports demons to be excellent
for bias ply, light, with nice profile conducive to easy
turn in and entry to corners or roundabouts etc..
other members speak highly of michelin radials..

this is one of those regular well documented topics,
including here and cbr300r [same sizes] forums etc..

if your going for how oversized tires look to others,
then actual performance is not the priority here..
then its a matter of width vs swingarm size..
and of course where best to park it..

The profile of the 160/60 looks square compared to the 140/70 on my R3.
In my opinion the 160/60 is oddly shaped on the bike, so looking at 150/70 or 140/70.
Roads out here in Thailand are fairly good, some roads concrete, most are tarmacadam.

Not being a local, living out in the sticks, will need take the wheels off the bike and take them into Korat city.
Fitting better rubber to the R3, then put it's rubber on the CBR. CBR has plenty tread left but already very thin cracks appearing in the rubber, with the tyres being 4+ years old

I've raced a bunch of different tire brands and sizes, and finally settled on the Pirelli GP3 tires (rear 115/70-R17, front 100/70-R17). The bike handles like a dream with almost any tire (as long as you adjust the geometry for the tire profile), but the smaller tires have plenty of grip and spin up much more quickly than larger, heavier tires.

I've also looked into Marchesinni rims, but they won't fit without a ton of custom work. The OEM rims are pretty darn light, so different rims are not worth it for performance gains.

Of course, I'm speaking from a pure performance viewpoint, since all I do is race. If style is your thing, definitely do not listen to me (no style at all).
